Ingredients:
- Basmati rice: 1 cup
- Tofu pieces: 10-12
- Onion: 1-2 (chopped)
- Spinach: 1 cup (Washed)
- Ginger: a small piece (grated)
- Salt: to taste
- Red chilli pwd: to taste
- Cumin seeds: 1tbsp
- Oil: 3-4 tbsp
- Coconut: 1/4 cup (grated) (optional)
Method:
- Wash rice properly and soak it in 2 cups water for 10-15 mins.
- Heat oil(4 tbsp) in pan. Shallow fry tofu pieces and keep them aside.
- Now add cumin seeds . Let them splutter.
- Add onion and ginger. Cook on low flame till onion turns translucent.
- Add spinach. Cook for 3-4 mins till spinach is done.
- Add rice and water(in which it was soaked), salt, red chilli pwd, coconut (grated) and tofu pieces.
- Take a boil on high flame and cook on low flame till rice is done (~ 10-15 mins).
- Serve hot with curd.
