Ingredients:
- Cauliflower florets: 1 cup (chopped)
- Butter- 2-3 tbsp
- Onion: 1 (chopped)
- Garlic: 1 clove (chopped)
- Cumin seeds: 1 tsp
- Potatoes: 1-2 (chopped)
- Sugar: 1 tsp
- Salt: to taste
- Oregano: 1/2 tsp
- Milk: 1/2 cup
- Black Pepper pwd: to taste
- Bay Leaf: 1
- Vegetable stock : 1- 1.5 cup (approx)
Method:
- Melt butter in pan. Add cumin seeds. Let them splutter.
- Add garlic, onion. Cook till onions turn translucent.
- Add potatoes, salt, pepper pwd and cauliflower florets.
- Add vegetable stock, which should just cover the vegetables.
- Add bay leaf. Take a boil in high flame.
- Then lower the flame, cover and cook for 10-12 mins till vegetables are cooked.
- Add milk and sugar. Mix well. Turn off the gas and let it cool for 5 mins.
- With the help hand blender/ mixi, blend it to form a smooth puree.
- Ready to Serve.
