Ingredients:
- Cornflour: 2 tbsp (for crunchiness)
- Maida/ Plain Flour: 1 cup
- Yogurt: 1 cup
- Turmeric pwd/ Food colour (Yellow/ Orange) : a pinch
- Saffron strands: a few (Crush into powder, if possible)
- Oil: 2 tbsp
- For Yeast Mixture:
- Yeast: 1 tsp
- Sugar: 1 tsp
- Lukewarm water: 2 tbsp
- For sugar syrup:
- Sugar: 1 cup
- Water: 3/4 cup
- Green cardamom pwd: a pinch
- Lemon juice: 1 tsp (to prevent crystallization)
- Saffron strands: a few
- Oil: for frying
- Zip lock bag with a hole in it/ ketchup bottle
- In a bowl, mix all the ingredients of the Yeast Mixture. Cover and let it rise for 10 mins.
- In another bowl, mix maida, cornflour,oil, turmeric pwd/ food colour. Add yogurt and mix well to form lump-free batter.
- Now, add yeast mixture. Mix well to remove all the lumps. Let it rest for 15-20 mins.
- After 15- 20 mins, check the batter. The batter should be of pouring consistency. If the batter is thick, add a little water and mix well. (Don't add too much water)
- In a pan, add sugar and water. Take a boil. Simmer it for 5-6 mins to get single- thread syrup. Add cardamom pwd, saffron strands and lemon juice.
- Heat oil in flat pan.
- Now take a zip-lock bag/ ketchup bottle. Fill the batter in it.
- Now the temperature of the oil should be low while swirling the jalebis and medium while frying them.
- Make swirls of jalebis in oil. Deep fry them.
- Put them in the sugar syrup for 30 sec. Take them out.
- Serve hot.
