Ingredients:
- Rice: 1 cup
- Water: 2 cups
- Zucchini/ Courgette (grated with skin): 1 cup
- Oil/ Butter: 1-2 tbsp
- Cumin seed (jeera): 1/2 tsp
- Mustard seed (rai): 1/2 tsp
- Red Chilli (whole): 1-2
- Salt: to taste
Method:
- Heat the oil/ butter in a pan.
- Add cumin seeds and mustard seeds to the oil. Let them splutter.
- Add whole red chilli. Add rice and stir-fry for about 2 minutes.
- Add water, zucchini and salt. Stir and take a boil.
- Lower the flame and cook for 12- 15 mins until rice is cooked.
- Serve with curd/yogurt, vegetable curry, daal or pickle.
