Kheer/ Rice Pudding

This is the 400th recipe for my blog. Though common, but still special :))




Ingredients:
  • Milk: 1 Litre 
  • Rice: 1/2 cup (Washed and soaked in water for 2-3 hours)
  • Saffron strands: a few (soaked in 1-2 tbsp milk)
  • Almonds: a handful (Soak in water for 2-3 hours, peel and chop them)
  • Sugar: 8-10 tbsp (or to taste)
  • Green cardamom pwd: 1 tsp
  • Cinnamon pwd: 1 tsp (optional)

Method:

  1. Mash soaked rice with hands.
  2. Boil milk in pan.
  3. Add rice and cook on medium flame. Keep stirring continuously.
  4. Add saffron soaked in milk.
  5. Add cardamom pwd, cinnamon pwd and sugar. Mix it well.
  6. Cover and cook on low flame for 1.30hrs- 2 hrs till it gets thick. Keep stirring continuously.
  7. Before serving, garnish with almonds.
  8. Serve hot or cold.

PS:
You can add dryfruits of your choice.
