Ingredients:
- Mustard oil: 1-2 tbsp
- Mustard seeds: 1-2 tsp
- Couscous: 1 cup
- Chickpeas: 1 cup (boiled)
- Onion: 1 (chopped)
- Mint chutney: 1-2 tbsp
- Tomato: 1
- Salt: to taste
- Freshly ground Black Pepper: to taste
- Oregano: 1 tsp
- Vegetable stock/ water: 4 cups
- Lemon juice: to taste
- Veg's- Sweetcorn, pepper, peas, spinach etc. (optional)
Method:
- Heat oil in pan. Add mustard seeds. Let them splutter.
- Add onions. Cook for 1-2 mins. Add tomatoes, mint chutney, chick peas, salt and black pepper.
- Cook for another 2-3 mins. Add vegetables.
- Cook till vegetables are done. Keep aside.
- Put cousous in a big bowl. Add 4 cups of boiling water/ veg stock. Let it stand for 7-10 mins.
- Stir it gently and mix veg in it.
- Serve hot or cold.
