Ingredients:
- Mushrooms(Closed-cup/ Button): 300-400 gms (~12-15 pieces) (chopped)
- Carrot: 1 (chopped)
- Green Beans: 5-6 (chopped)
- Garlic: 2 cloves (chopped)
- Ginger: a small piece (chopped)
- Onion: 1 (chopped)
- Vegetable stock: 1 cup
- Salt: to taste
- Vinegar: 1-2 tsp (optional)
- Oil: 1 tsp
- For Garnish: Cream (optional)
Method:
- Heat oil in pan.
- Saute garlic, ginger, onions,salt until onions turns light brown.
- Add carrots and beans. Cook for 7-8 mins on low flame.
- Add mushrooms and vegetable stock.Cook for another 5 mins.
- Turn off the flame.
- Blend it to form a soup.
- Add vinegar. Cook for 1-2 mins.
- Garnish with a swirl of cream and Serve hot.
