Ingredients:
- Carrots: 3-4 (Peeled and chopped into small pieces)
- Sugar
- Ghee: 2-3 tbsp
- Raisins, Almonds, Cashews
- Fresh coconut pieces (Remove the brown skin and chop finely)
- Cardamom pwd: 1 tsp
- Boiled milk: 1 cup
Method:
- Put carrots and cashews in pressure cooker/ pan. Boil them until carrots become soft.
- Cool them and grind to form coarse paste.
- Heat ghee in pan.
- Add almonds and raisins. Cook for 1-2 mins.
- Add coconut pieces.
- Add milk. Mix well.
- Add carrot-cashew paste and cook on low flame until mixture becomes slightly thick.
- Keep stirring continuously.
- You can garnish with chopped almonds, cashews and raisins. (optional)
You can add 1 tsp cornflour (mixed with milk) to get better consistency.
