Carrot Payasam



Ingredients:
  • Carrots: 3-4 (Peeled and chopped into small pieces)
  • Sugar
  • Ghee: 2-3 tbsp
  • Raisins, Almonds, Cashews
  • Fresh coconut pieces (Remove the brown skin and chop finely)
  • Cardamom pwd: 1 tsp
  • Boiled milk: 1 cup

Method:
  1. Put carrots and cashews in pressure cooker/ pan. Boil them until carrots become soft.
  2. Cool them and grind to form coarse paste.
  3. Heat ghee in pan.
  4. Add almonds and raisins. Cook for 1-2 mins.
  5. Add coconut pieces.
  6. Add milk. Mix well.
  7. Add carrot-cashew paste and cook on low flame until mixture becomes slightly thick.
  8. Keep stirring continuously.
  9. You can garnish with chopped almonds, cashews and raisins. (optional)
PS:
You can add 1 tsp cornflour (mixed with milk) to get better consistency.
