Benefits of Couscous:
Couscous is a good source of B vitamins, niacin, fiber and proteins. It helps in maintaining a healthy digestive system.
Ingredients:
- Couscous: 1 bowl
- Carrot: 1 (chopped)
- Onion: 1-2 (chopped)
- Potato: 1 (chopped)
- Peas: 1/2 cup
- Sweet Corn: 1/4 cup
- Tomato: 1 (chopped)
- Salt: to taste
- Mustard seeds (Rai): 1 tsp
- Red Chilli pwd: to taste
- Oil: 1-2 tsp
- Water: 1 bowl
- Roasted Peanuts : a handful
Method:
- Heat oil in pan. Add mustard seeds. Let them splutter.
- Add onion. Cook till translucent on low flame. Add salt, red chilli pwd.
- Add carrot, potato, peas, sweet corn, tomato. Cook till done (i.e. vegetables doesn't taste raw)
- Add water. Bring it to boil. Turn off the gas.
- Add couscous, peanuts and cover for 10-15 mins.
- Yummy and Healthy dish is ready to serve.
PS:
- You can add aubergine, courgette also, as they are main ingredients of Mediterranean Style Couscous.
- For a variation, add boiled chick peas and onion instead of vegetables. Serve with crisps as shown in pic below.
