Vegetable Couscous



Benefits of Couscous:
Couscous  is a good source of B vitamins, niacin, fiber and proteins. It helps in maintaining a healthy digestive system.


Ingredients:
  • Couscous: 1 bowl
  • Carrot: 1 (chopped)
  • Onion: 1-2 (chopped)
  • Potato: 1 (chopped)
  • Peas: 1/2 cup
  • Sweet Corn: 1/4 cup
  • Tomato: 1 (chopped)
  • Salt: to taste
  • Mustard seeds (Rai): 1 tsp
  • Red Chilli pwd: to taste
  • Oil: 1-2 tsp
  • Water: 1 bowl 
  • Roasted Peanuts : a handful 
Method:
  1. Heat oil in pan. Add mustard seeds. Let them splutter.
  2. Add onion. Cook till translucent on low flame. Add salt, red chilli pwd.
  3. Add carrot, potato, peas, sweet corn, tomato. Cook till done (i.e. vegetables doesn't taste raw)
  4. Add water. Bring it to boil. Turn off the gas.
  5. Add couscous, peanuts and cover for 10-15 mins. 
  6. Yummy and Healthy dish is ready to serve.
PS:
  • You can add aubergine, courgette also, as they are main ingredients of Mediterranean Style Couscous.
  • For a variation, add boiled chick peas and onion instead of vegetables. Serve with crisps as shown in pic below.
