Spinach and Tofu Rice



Ingredients:
  • Basmati rice: 1 cup
  • Tofu pieces: 10-12 
  • Onion: 1-2 (chopped)
  • Spinach: 1 cup (Washed)
  • Ginger: a small piece (grated)
  • Salt: to taste
  • Red chilli pwd: to taste
  • Cumin seeds: 1tbsp
  • Oil: 3-4 tbsp
  • Coconut: 1/4 cup (grated) (optional)

Method:
  1. Wash rice properly and soak it in 2 cups water for 10-15 mins.
  2. Heat oil(4 tbsp) in pan. Shallow fry tofu pieces and keep them aside.
  3. Now add cumin seeds . Let them splutter.
  4. Add onion and ginger. Cook on low flame till onion turns translucent.
  5. Add spinach. Cook for 3-4 mins till spinach is done.
  6. Add rice and water(in which it was soaked), salt, red chilli pwd, coconut (grated) and tofu pieces.
  7. Take a boil on high flame and cook on low flame till rice is done (~ 10-15 mins).
  8. Serve hot with curd.
