Arvi/ Arbi with Gravy

I learnt this dish from my mom-in-law.




Ingredients:
  • Arvi/ Arbi/ Eddoe Vegetable: 6-7 pieces  (see in pic on right)
  • Onion: 1 (chopped finely)
  • Ajwain/ Carom seeds: 1-2 tsp
  • Cumin seeds: 1 tbsp
  • Asafoetida: a pinch
  • Turmeric pwd: 1 tsp
  • Salt: to taste
  • Lemon juice: 1-2 tbsp
  • Oil: 3 tbsp
  • Red chilli pwd: to taste

Method:
  1. Peel Arbi/ Eddoe vegetable. Wash it and cut in small pieces.
  2. Heat oil in pan. Roast arvi/ arbi till golden brown . Keep it aside.
  3. In a cooker, heat 1 tbsp oil.
  4. Add cumin seeds, asfoetida and carom seeds. Let them splutter.
  5. Add onion. Cook till it turns translucent. 
  6. Add salt, red chilli pwd and turmeric pwd.
  7. Add Arbi/ Eddoe veg. Add 1glass water.
  8. Take 1 whistle. Simmer and cook for 5 mins. Turn off the gas.
  9. Put lemon juice.
  10. Serve hot with chapatiparatha and raita.
