Ingredients:
- Arvi/ Arbi/ Eddoe Vegetable: 6-7 pieces (see in pic on right)
- Onion: 1 (chopped finely)
- Ajwain/ Carom seeds: 1-2 tsp
- Cumin seeds: 1 tbsp
- Asafoetida: a pinch
- Turmeric pwd: 1 tsp
- Salt: to taste
- Lemon juice: 1-2 tbsp
- Oil: 3 tbsp
- Red chilli pwd: to taste

Method:
- Peel Arbi/ Eddoe vegetable. Wash it and cut in small pieces.
- Heat oil in pan. Roast arvi/ arbi till golden brown . Keep it aside.
- In a cooker, heat 1 tbsp oil.
- Add cumin seeds, asfoetida and carom seeds. Let them splutter.
- Add onion. Cook till it turns translucent.
- Add salt, red chilli pwd and turmeric pwd.
- Add Arbi/ Eddoe veg. Add 1glass water.
- Take 1 whistle. Simmer and cook for 5 mins. Turn off the gas.
- Put lemon juice.
- Serve hot with chapati/ paratha and raita.
