Ingredients:
- Courgette: 2 (chopped)
- Spinach: 1 cup (chopped)
- Onion: 1 (chopped)
- Garlic: 1 clove (chopped)
- Carrot: 1 (peeled and chopped) (optional)
- Tomatoes: 2-3 (chopped)
- Salt: to taste
- Ginger: 1-2 tbsp (chopped)
- Olive oil: 1 tsp
Method:
- Heat oil in pan. Add garlic, ginger and onion.Cook for few mins.
- Add carrot, salt, courgette, tomatoes and spinach. Cook till all vegetables become tender.
- Turn off the gas and let it cool.
- Blend it to form a smooth puree. Add water, if needed.
- Serve hot.
