Courgette and Spinach soup


Ingredients:
  • Courgette: 2 (chopped)
  • Spinach: 1 cup (chopped)
  • Onion: 1 (chopped)
  • Garlic: 1 clove (chopped)
  • Carrot: 1 (peeled and chopped) (optional)
  • Tomatoes: 2-3 (chopped)
  • Salt: to taste
  • Ginger: 1-2 tbsp (chopped)
  • Olive oil: 1 tsp
Method: 
  1. Heat oil in pan. Add garlic, ginger and onion.Cook for few mins.
  2. Add carrot, salt, courgette, tomatoes and spinach. Cook till all vegetables become tender.
  3. Turn off the gas and let it cool.
  4. Blend it to form a smooth puree. Add water, if needed.
  5. Serve hot.
