Poha/ Chewda



Ingredients:
  • Puffed rice (Poha): 1 cup
  • Onion: 1 (big) (chopped finely)
  • Potato: 1 (chopped)
  • Tomato: 1 (chopped)
  • Carrot: 1(chopped)
  • Capsicum/ Pepper: 1(chopped)
  • Peas: 1/2 cup
  • Green chillies: 1(chopped)
  • Mustard seeds: 1 tsp
  • Salt: as per taste
  • Lemon juice : 1-2 tbsp
  • Turmeric pwd: 1/2 tsp
  • Oil: 1-2 tbsp
  • Peanuts: a handful
  • Curry leaves: a few
  • Bhujia / Sev (optional)
  • Coriander leaves
Method:
  1. Wash Poha and sprinkle some salt, turmeric pwd and lemon juice on it. Mix it gently. Keep it aside for 10-15 mins.
  2. Heat oil in pan. Add mustard seeds. Let them splutter. Add curry leaves.
  3. Add onion. Cook for few mins on low flame till translucent.
  4. Add potato, carrot, peas, capsicum, green chilli. Cook till tender.
  5. Add poha to the vegetables. Mix it properly. 
  6. Cook on low flame for 2 mins. 
  7. Sprinkle peanuts and Bhujia. 
  8. Garnish with coriander leaves. Serve hot.
