Ingredients:
- Puffed rice (Poha): 1 cup
- Onion: 1 (big) (chopped finely)
- Potato: 1 (chopped)
- Tomato: 1 (chopped)
- Carrot: 1(chopped)
- Capsicum/ Pepper: 1(chopped)
- Peas: 1/2 cup
- Green chillies: 1(chopped)
- Mustard seeds: 1 tsp
- Salt: as per taste
- Lemon juice : 1-2 tbsp
- Turmeric pwd: 1/2 tsp
- Oil: 1-2 tbsp
- Peanuts: a handful
- Curry leaves: a few
- Bhujia / Sev (optional)
- Coriander leaves
Method:
- Wash Poha and sprinkle some salt, turmeric pwd and lemon juice on it. Mix it gently. Keep it aside for 10-15 mins.
- Heat oil in pan. Add mustard seeds. Let them splutter. Add curry leaves.
- Add onion. Cook for few mins on low flame till translucent.
- Add potato, carrot, peas, capsicum, green chilli. Cook till tender.
- Add poha to the vegetables. Mix it properly.
- Cook on low flame for 2 mins.
- Sprinkle peanuts and Bhujia.
- Garnish with coriander leaves. Serve hot.
