Ingredients:
- Rava/ Sooji: 2 cups
- Oats: 1/2 cup (optional)
- Eno sachet : 1
- Baking soda: a pinch
- Curd: 1/2- 1 cup (optional)
- Salt: to taste
- Onion: 1-2 (chopped)
- Tomato puree: 1/2- 1 cup
- Tomato Ketchup: 2 tbsp
- Mustard seeds: 2 tbsp
- Cabbage: 1/2 cup (chopped)
- Courgette: 1(grated)
- Carrots:1-2 (grated)
- Capsicum: 1(chopped finely)
- Celery: chopped
- Oil: 1-2 tbsp
- Green chilli: slit from centre
- Red chilli pwd: to taste
- Fresh coriander leaves: chopped
Method:
- Mix rava, oats, curd, baking soda, salt and water (~1- 1.5 cups) to form batter (Batter should not be thick, if needed add more water). Add salt and mustard seeds (1/2 tbsp). Mix well.Keep it aside for 1/2- 1 hour.
- Now take little batter in separate pan (the amount that you have to put in idli stand, keep the rest aside) and add eno (1/4 tsp). Mix it and pour it in idli stand and steam it till done. (After adding eno, pour batter in idli stand asap) .
- Take out idlis from the moulds and let them cool.
- Once the idlis cool down, cut them in four parts.
- Seasoning:
- Heat oil in pan. Add mustard seeds and let them splutter. Add green chilli.
- Add onions and celery.Cook for few mins. Add all the vegetables. Add salt and mix well. Cover and cook for another few mins. (Don't overcook)
- Add tomato puree, tomato ketchup, red chilli pwd and a little water (~1/4 cup). Cook for few mins. Add chopped coriander leaves.
- Add idlis in the seasoning. Mix well.
- Serve hot.
