Avial

Avial is a dish of Kerala. It is a thick mixture of vegetables and coconut paste, seasoned with curry leaves. Commonly used vegetables in Avial are: Yam, Plantain, Carrots, Drumstick, brinjal, snake gourd. Although, you can use any vegetable and  it can be made thick or little watery as per taste. Ingredients:

  • Raw banana: 1
  • Carrots: 2
  • Peas: 1/2 cup 
  • Beans : 10-15
  • Drumstick: 1
  • Coconut: 1/2 (Peel the brown part)
  • Green chillies: 2-4 (or as per taste)
  • Cumin seeds: 1 tsp
  • Salt: to taste
  • Turmeric pwd: 1 tsp
  • Curd: 1 cup (beaten properly)
  • Curry Leaves: a few
  • Oil: 1 tsp


Method:

  1. Paste:
    • Grind coconut, green chillies and cumin seeds with a little water and make a fine paste.
    •  Mix curd and keep it aside.
  2. Peel and chop all the vegetables in equal size.
  3. Boil all the Vegetables with salt and turmeric pwd . Make sure the vegetables are not over cooked.
  4. Mix the paste with the boiled vegetables. Cook for 5-6 mins on low flame so that the water evaporates.
  5. Heat oil in pan. Put curry leaves and cook for 1 min. Add these curry leaves to the boiled vegetables.
  6. Mix well.
  7. Serve with boiled rice.
