Mushroom Soup




Ingredients:
  • Mushrooms(Closed-cup/ Button): 300-400 gms (~12-15 pieces) (chopped)
  • Carrot: 1 (chopped)
  • Green Beans: 5-6 (chopped)
  • Garlic: 2 cloves (chopped)
  • Ginger: a small piece (chopped)
  • Onion: 1 (chopped)
  • Vegetable stock: 1 cup
  • Salt: to taste
  • Vinegar: 1-2 tsp (optional)
  • Oil: 1 tsp
  • For Garnish: Cream (optional)

Method:
  1. Heat oil in pan.
  2. Saute garlic, ginger, onions,salt  until onions turns light brown.
  3. Add carrots and beans. Cook for 7-8 mins on low flame.
  4. Add mushrooms and vegetable stock.Cook for another 5 mins.
  5. Turn off the flame.
  6. Blend it to form a soup.
  7. Add vinegar. Cook for 1-2 mins.
  8. Garnish with a swirl of cream and Serve hot.
