Ingredients:
For Potato Stuffing
| Potato | 5-6 (medium size) | 
| Paneer(Indian Cheese) | 100 gms approx.  | 
| Kismis /raisins | 12 | 
| Salt | As per taste (~ 2tsp) | 
| Amchur(optional) | ½ tsp | 
| Butter | 2 tbsp | 
For Gravy
| Onion | 2 (medium size) (Chopped finely) | 
| Tomato | 3(medium size) (chopped finely) | 
| Ginger | ½ inch piece (grated) | 
| Salt | As per taste | 
| Coconut powder (optional) | 3 tbsp | 
| Water (Tap water) | 1/4th cup | 
| Cumin Seeds/Jeera | 1-1 ½ tsp | 
| Turmeric pwd | 1 tsp | 
| Red Chilli Pwd | As per taste | 
| Garam masala | ½ tsp | 
| Oil | 2tbsp | 
| Tomato Ketchup | 3 tbsp | 
Method:
For Potato stuffing:
- Boil the potatoes and refrigerate then for 4-5 hours. (Don’t peel)
- Paneer Mixture: Grate Paneer and add salt and amchur to it. Keep it aside.
- After 4-5 hours, take out potatoes from fridge (If you want to peel them, you can.. but potatoes with skin are very healthy).
- Slice off the top(cap) of potatoes and scoop off the inside part of potatoes to make them empty .
- Apply butter on the inner walls of (empty) potatoes.
- Put 1-2 raisins inside each potato and stuff the paneer mixture inside it.
- Keep it aside.
For Gravy:
- Heat oil in pan. Add cumin seeds and when the seeds start to crackle, add turmeric powder, onion, ginger and salt.
- Fry till onions are translucent. Then add tomato. Add red chilli pwd and garam masala.
- When done (that is when tomatoes donot taste raw), remove from gas.
- Let it cool for 10 mins and blend it into a smooth puree.
- In a separate bowl, take coconut powder . Add water to it and stir it properly to make coconut milk. Add it to onion-tomato Puree.
- Switch on the gas and Bring the puree(gravy) to boil. And low the flame.
- Finally, arrange (stuffed) potatoes in the gravy in such a way that the potatoes are dipped in the gravy. Cover the lid and cook on sim gas for 5 minutes.
- Ready to serve.
