Vegetable Noodles



Ingredients:
  • Noodles: 100 gms
  • Capsicum / Green pepper: 1-2 (chopped into thin long strips)
  • Spring onions: 3-4 (chopped)
  • Cabbage: 1 cup (chopped)
  • Tomato: 1 (Chopped or pureed)
  • Peas: 1/2 cup
  • Carrot: 1(grated)
  • Potato: 1(chopped)(Optional)
  • Mustard seeds: 1 tsp
  • Salt: to taste
  • Red chilli pwd: to taste
  • Soya Sauce: to taste (~ 2tbsp)
  • Vinegar: 1 tbsp
  • Black pepper pwd: 1 tsp
  • Oil: 3-4 tbsp
Method:
  1. Boil noodles with a little salt, oil (1 tbsp) and water(~3 cups) till done.
  2. Drain the water out in strainer. Keep it aside.
  3. Heat 2 tbsp oil in pan. Add mustard seeds. Let them splutter.
  4. Add onion. Cook for few mins. Add carrot, cabbage, potato, capsicum , peas. Cook for 5 mins. 
  5. Add salt , black pepper pwd.
  6. Add tomato(chopped) (or tomato puree ). Cook till done.
  7. Add boiled noodles. Mix them properly with cooked vegetables.
  8. Add soya sauce and vinegar. Cook for 1-2 mins.
  9. Ready to serve.
