Black Eyed Beans Curry/ Raungi/ Lobia

Ingredients:
  • Black eyed Beans/ Lobia/ Raungi : 1/2 cup
  • Curry leaves: a few
  • Tomatoes: 2-3 (chopped/ pureed)
  • Ginger: a small piece (grated)
  • Salt: to taste
  • Green chilli:  1( chopped)
  • Turmeric pwd: 1/2 tsp
  • red chilli pwd: to taste
  • Potato: 1 (chopped)
  • Oil: 1 tsp
Method:
  1. Wash black eyed beans thoroughly.
  2. In a pressure cooker, add black eyed beans and ample water (~ 2 cups). Soak for approx 30-40 mins.
  3. Grind tomatoes, green chilli curry leaves and ginger to form a puree.
  4. Add this puree in the cooker.
  5. Add oil, red chilli pwd and salt.
  6. Take 2-3 whistles on high flame and cook on low flame for 15-20 mins on low flame.
  7. Ready to serve with chapati, parantha, nan or bread.
