Besan Ki Burfi/ Gram Flour Fudge

Shelf Life: 10-12 days

Ingredients:


  • Besan/ Gram Flour: 1 cup
  • Desi Ghee: 1/4 cup
  • Milk: 2 tbsp
  • Sugar: 1/2 cup 
  • Water: 1/4 cup
  • Green cardamom pwd: 1-2 tsp
  • Chopped Dryfruits (optional)
Method:
  • Heat ghee in pan.
  • Add besan and milk and cook on low flame till it turns light brown (approx 15-18 mins). 

  • Meanwhile, lets make sugar syrup.
  • Keep stirring besan in between.
  • Sugar syrup :
    • Add sugar in pan. Add water (1/4 cup). 
    • Turn on the gas. The flame should be medium. Cook till sugar dissolves. (It takes 1-2 mins). Add green cardamom powder.
    • Once the sugar dissolves, cook for 3 more mins. (You can check the thread by taking a drop of in between index finger and thumb, when you'll stretch, you will see a thread formed between your index finger and thumb)
    • Turn off the flame. Keep aside.
  • When the besan is done, switch off the flame.
  • Put the besan mixture in sugar syrup. Mix well. Turn on the gas.
  • On the low flame, cook till your mixture is ready to solidify (jamne wali consistency). It will take 2-3 mins max. (Check by putting little mixture in bowl and see if it turns into dough on cooling). Turn off the gas.
  • Apply ghee on  a plate/ flat box.
  • Pour the mixture on the plate. Flatten the top of the mixture on plate.
  • Spread the mixture on it. Sprinkle chopped dryfruits.


  • Let it rest for 1 hour till it solidifies. (Check after 15- 20 mins, if it is ready, cut in desired shape else keep the mixture till it solidifies)
  • Cut in desired shape.
  • Besan burfi is ready to serve.
