Chana Daal Salad




Ingredients:

  • Boiled chana daal : 1 cup
  • Capsicum: 1/2 (chopped)
  • Tomato: 1 ( chopped)
  • Cucumber: 1/2 (chopped)
  • Carrot: grated
  • Green chilli : to taste (chopped)
  • Salt: to taste
  • Lemon juice: to taste
  • Fresh coriander leaves: chopped


Method:

  • Mix all the above ingredients and Serve.

Kachumber Salad

Kachumber Salad is a mixture of raw vegetables like onion, cucumber, tomato, capsicum, kakdi. I learnt this recipe from my sister-in-law Pooja Jindal, who herself cooks very tasty dishes :)



Ingredients:

  • Onion:2 (chopped)
  • Tomatoes: 2 (chopped)
  • Cucumber: 1 (chopped)
  • Salt
  • Black Pepper pwd
  • Lemon Juice: 1-2 tsp
Method:
  1. Mix all the above ingredients in bowl.
  2. Serve chilled.
PS:
You can also add green capsicum and kakdi in the salad.

Moong Sprouts







Ingredients:

  • Daal moong sabut: 1 cup
  • Moth beans: 1/2 cup
  • Salt: to taste
  • Red chilli pwd: to taste
  • Oil: 1 tsp
  • Lemon juice: 1 tsp
  • Onion: 1 (chopped)
  • Pomegranate seeds
  • Cucumber : 1/2(chopped)
  • Boiled Potato: 1 (chopped)
  • Sev
Method:
  1. Wash moth beans and moong sabut daal and soak overnight in ample water.
  2. Next day, drain water and put both the daals in bowl/ strainer for 24 hours. You will see sprouts coming out the next day. (see pic below)
  3. Heat oil in pan.
  4. Add both the daals, salt, red chilli pwd. Cook on low flame for 4-5 mins.
  5. Add onion, pomegranate seeds, boiled potato, cucumber, lemon juice and sev.
  6. Ready to serve.

Couscous Salad- A very healthy snack



Ingredients:

  • Mustard oil: 1-2 tbsp
  • Mustard seeds: 1-2 tsp
  • Couscous: 1 cup
  • Chickpeas: 1 cup (boiled)
  • Onion: 1 (chopped)
  • Mint chutney: 1-2 tbsp
  • Tomato: 1
  • Salt: to taste
  • Freshly ground Black Pepper: to taste
  • Oregano: 1 tsp
  • Vegetable stock/ water: 4 cups 
  • Lemon juice: to taste
  • Veg's- Sweetcorn, pepper, peas, spinach etc. (optional)

Method:

  1. Heat oil in pan. Add mustard seeds. Let them splutter.
  2. Add onions. Cook for 1-2 mins. Add tomatoes, mint chutney, chick peas, salt and black pepper.
  3. Cook for another 2-3 mins. Add vegetables.
  4. Cook till vegetables are done. Keep aside.
  5. Put cousous in a big bowl. Add 4 cups of boiling water/ veg stock. Let it stand for 7-10 mins. 
  6. Stir it gently and mix veg in it.
  7. Serve hot or cold.

Moth Beans Salad



Ingredients:
  • Moth beans/ turkish grams: 1/2 cup
  • Black Eyed Beans /Lobia/ Raungi: 1/4 cup
  • Soya pieces: 10 pieces
  • Tomato: 2 (chopped)
  • Onion: 1 (chopped)
  • Salt: to taste
  • Black Pepper pwd: to taste
  • Lemon juice: to taste (~1 tbsp)

Method:
  1. Wash the beans (moth beans and black eyed beans) properly and soak overnight (~6-8 hours) in ample water.
  2. In pressure cooker, add the above soaked beans, salt and water (in which you soaked them.Add more water if necessary). On high flame, take 2-3 whistles and cook on low flame for 35-40 mins. (Don't throw this water as it is very nutritious. Either you drink it or use it for cooking)
  3. Soak soya chunks in water for 15-20 mins.
  4. In a pan, boil soya chunks on low flame for 5-10 mins till done.
  5. Now take a pan, add all the boiled beans, soya chunks, onion, tomato, salt, black pepper pwd and lemon juice. Mix well.
  6. Ready to Serve.

Three Bean Salad

Three Bean Salad- A healthy option for all !!! 


Benefits of Beans:
Beans are low in fat, high in protein and contain soluble fibre that helps in lowering cholesterol and cleansing our internal system. They help in preventing diabetes and fight cancer. So all in all, a very healthy food that should be part of our regular diet.

Ingredients:
  • Black Eyed Beans /Lobia/ Raungi: 1/4 cup
  • Red Kidney Beans /Rajmah: 10-15 grains
  • Chickpeas/ Kabuli Chane: 10-15 grains
  • Black split gram/ Kale chane: 1/4 cup
  • Soya pieces: 10 pieces
  • Potato: 2 (boiled, peeled and chopped)
  • Cucumber: 1/2 (chopped)
  • Tomato: 2 (chopped)
  • Salt: to taste
  • Black Pepper pwd: to taste
  • Lemon juice: to taste (~1 tbsp)
Method:
  1. Wash all the four beans (red kidney beans, black eyed beans, chickpea, black split gram) properly and soak overnight (~6-8 hours) in ample water.
  2. In pressure cooker, add the above soaked beans, salt and water (in which you soaked them.Add more water if necessary). On high flame, take 2-3 whistles and cook on low flame for 1 hr. (Don't throw this water as it is very nutritious. Either you drink it or use it for cooking)
