Eddoes are small root vegetables that helps slow absorption of glucose, hence the reduces the requirement of insulin. Also, it reduces bile acids from intestines.
Ingredients:
- Arvi/ Arbi/ Eddoe Vegetable: 6-7 pieces (see in pic on right)
- Onion: 1 (chopped into thin long slices)
- Ajwain/ Carom seeds: 1-2 tsp
- Cumin seeds: 1 tbsp
- Turmeric pwd: 1 tsp
- Salt: to taste
- Tomato: 1 (chopped)
- Oil: for frying
- Red chilli pwd: to taste
Method:
- Peel Arbi/ Eddoe vegetable. Wash it and cut in thin long pieces.
- Heat oil in pan. Deep fry it to light golden brown.
- In another pan, heat 1 tbsp oil.
- Add cumin seeds and carom seeds. Let them splutter.
- Add onion. Cook till it turns translucent.
- Add tomatoes and cook for 3-4 mins.
- Add salt, red chilli pwd and turmeric pwd.
- Add Arbi/ Eddoe veg. Add 2 tbsp water.
- Cover and cook for 2-3 mins.
- Serve hot with chapati/ paratha, raita or daal/lentil.
