Dry Arbi/ Arvi/ Eddoe Vegetable

Health Benefits:
Eddoes are small root vegetables that helps slow absorption of glucose, hence the reduces the requirement of insulin. Also, it reduces bile acids from intestines.




Ingredients:
  • Arvi/ Arbi/ Eddoe Vegetable: 6-7 pieces  (see in pic on right)
  • Onion: 1 (chopped into thin long slices)
  • Ajwain/ Carom seeds: 1-2 tsp
  • Cumin seeds: 1 tbsp
  • Turmeric pwd: 1 tsp
  • Salt: to taste
  • Tomato: 1 (chopped)
  • Oil: for frying
  • Red chilli pwd: to taste

Method:
  1. Peel Arbi/ Eddoe vegetable. Wash it and cut in thin long pieces.
  2. Heat oil in pan. Deep fry it to light golden brown.
  3. In another pan, heat 1 tbsp oil.
  4. Add cumin seeds and carom seeds. Let them splutter.
  5. Add onion. Cook till it turns translucent. 
  6. Add tomatoes and cook for 3-4 mins.
  7. Add salt, red chilli pwd and turmeric pwd.
  8. Add Arbi/ Eddoe veg. Add 2 tbsp water.
  9. Cover and cook for 2-3 mins.
  10. Serve hot with chapati/ paratha, raita or daal/lentil.
