Stir Fry Mushrooms and Broccoli



When it comes to quick and easy recipes, this one is right up there. So I asked my hubby to prepare this dish albeit with a small challenge. The challenge was to cook it with minimum oil - so it will not be really fried mushroom but a slight and healthy variation. You bet, Suneet did come up trumps - he prepared the dish with  1tbsp oil.

Benefits of Mushrooms: Mushrooms are good source of folic acid and are nearly 80% water. They are rich in potassium (lowers BP), selenium (stronger immune system, fights against cancer) and copper (good for heart). Mushrooms are good for reducing cholesterol, lowering weight and for diabetic people.


Benefits of Broccoli:  Broccoli is one of those super foods that are an absolutely sine-qua-non of one's daily diet. They are a storehouse of various nutrients and anti-oxidants that help fight various cancers, regulates blood sugar and has antiviral properties (fights various diseases). It is good to cook broccoli with ginger and garlic or cook lightly in order to suppress flatulence and preserve the nutrients.


Ingredients:
  • Mushroom: 8-10 pieces (washed and cut into halves)
  • Broccoli: 6-7 florets
  • Onion: 3-4 (chopped into long strips)  
  • Ginger: 1 medium chunk (chopped)
  • Garlic: 5-6 cloves (chopped)
  • Oil: 4-5 tbsp
  • Salt: to taste
  • Soya sauce: 2-3 tbsp
  • Lemon juice: 1tsp (optional)
  • Cumin seeds: 1tsp 
Method:
  1. Dip mushrooms in water.
  2. Heat oil in pan. Add cumin seeds. Let them splutter. 
  3. Add onion. ginger, garlic and salt.Cook on medium flame till onions turn translucent.
    • The key to cook in less oil is to fry onions and ginger in 1 tbsp oil and then add little water before adding broccoli and mushrooms.
  4. Add broccoli. Cook for 3-4 mins on medium flame till half-done.
  5. Add mushrooms.Cook for another 8-10 mins until both broccoli and mushroom are done.
  6. Add soya sauce and mix well. Add lemon juice.
  7. Ready to serve with chapati, nan, rice or parantha
